These are easily the nicest shortbread biscuits I have ever tasted.
My partner was given the recipe for these by a Czech desert chef a few years ago and has been making them ever since. Whenever he makes them he always gets complimented on how nice they taste so I thought I’d share the recipe with you guys!
Just a heads up, the recipes a little different compared to what I usually post. These biscuits are definitely not healthy and are far from ‘clean eating’! Oh well. It’s good to be naughty every once in a while right?
Almond Shortbread
Ingredients
375g Plain Flour
160g Caster Sugar
63g Ground Almond
250g Unsalted Butter
Method
– Combine all the ingredients in a mixing bowl and mix until a dough is formed. (You may want to cut the butter into small chunks and warm it slightly to make this step easier!)
– Roll to about 1cm thick and using your cookie cutter, cut out your biscuit shapes. I find that smaller biscuits create a better crunch throughout without over cooking the edges. Once cut, place onto a baking paper lined tray
– Bake at 180C for around 15 to 20 minutes until golden brown. Keep a close eye on them during the final stages as they change really quick!
– Transfer the biscuits to a wire cooling rack. Sprinkle with a little extra caster sugar while they’re still hot, or allow them to cool and decorate with a little melted chocolate.

I have never thought to do a shortbread cookie with ground almonds in it, but I am sure it adds to the rich flavor and gives a nutty taste. Nice idea, I might have to try it out one day.
