Zingy Zoodles

Zoodles. I’ve said before that I feel like a fraud calling them zoodles as here in the UK,  zucchini is called courgette. But ‘Coodles’ doesn’t quite sound as good, does it?

This quick, yet tasty, low carb dish has become a regular in my meal plans. Try it out and let me know what you think!

If you want to mix it up a little (or don’t eat meat) substitute the chicken for some prawns or even tofu!

Ingredients

2 Med-Large Courgettes
1 Diced Onion
1 Chicken Breast
3 Crushed Garlic Cloves
1 Fresh Chili
8 Cherry tomatoes, roughly chopped
2 Lemons (juice only)
1 Stock cube (chicken/veg)
150ml Water
Salt, pepper and parsley to season
Fry light or olive oil to cook

Method

– Spiralize courgettes.
– Place onions into the wok and cook on a medium heat for 2-3 mins.
– Add the chicken, chilli and garlic and fry until the chicken is cooked.
– Next, Add the tomatoes, lemon juice, stock cube and water as well as 2 tsp parsley.
– Once bubbling, add the courgetti and simmer for 1-2 mins. Serve straight away.

    well, we have spaghetti, linguine, and many others, but wheat noodles are much the same 🙂 This recipe looks a good complete meal, what we call “un piatto unico”. I have to try it. Good job and nice photos!
