Apple Puffed Pancake

Who doesn’t love Pancakes?

During #Pancakeweek I decided I wanted to create something a little different. After creating my Blueberry Smoothie Pancakes, my Pumpkin Spice and my PB pancakes, I thought I’d have a go at making something baked!

Whilst I was in Berlin last year I searched everywhere for baked apple desserts (the German’s definitely know how to do this best!). One of the cafe’s I went into did an Apple and Cinnamon baked pancake, so naturally I had to try and recreate this!

So this is what I came up with. Not too far from what I tried back in Berlin, but I know I’m never going to be able to make them as well as they did!

Baked Apple and Cinnamon Pancakes

Ingredients

2 Large Apples (Sliced)
100g Spelt Flour
3 Eggs
150ml Almond milk
1 Tsp Baking powder
4 Tbsp Maple Syrup
1 Tsp Cinnamon
1/2 Tsp Salt
1 Tsp of Coconut Oil/Low Cal Spray

Method

– Heat a pan with 1 tsp of coconut oil (or low calorie spray) , add the sliced apples, 1 teaspoon of Cinnamon and 1 tablespoon of Maple Syrup and allow to cook for five minutes

– Place the flour, salt and baking powder in a mixing bowl

– Mix in the almond milk, eggs and maple syrup.

– Pour the mixture of the cooking apples and transfer to a pre heated oven (220C) for 15 minutes.
